The French version of sauerkraut is choucroute. It is in a league of its own thanks to fine seasoning and slow cooking in wine. Andre Laurent choucroute is usually cooked with lardons and champagne. This tasty dish is often served with boiled potatoes, sausages, and pork, but works well with many meats. Cook with a half glass of water over low heat. Better if served hot.
