This light and fluffy sponge cake is the ideal base for your holiday Bûche de Noël. Once cooled, simply unroll it, fill with your favorite cream or mousse, and decorate with festive flair. Perfect for creating a traditional French Christmas dessert that will impress everyone!

Ingredients

4 eggs

120g sugar (about 1/2 cup + 1 tbsp)

100g flour (about 3/4 cup)

A pinch of salt

Directions

  • Beat the egg yolks with the sugar until pale and fluffy. Sift in the flour and mix well.
  • Whisk the egg whites with a pinch of salt until stiff peaks form.
  • Gently fold one-third of the beaten egg whites into the yolk mixture to loosen the batter. Then, carefully fold the rest with a spatula to keep the batter light and airy.
  • Spread the batter evenly on a baking tray lined with parchment paper. Bake for 8–9 minutes at 180°C (350°F) until lightly golden.
  • Remove the sponge cake from the oven and immediately turn it onto a damp kitchen towel. Peel off the parchment paper, then roll the cake (without filling) using the towel. Cover and let cool completely.
