1.3 lbs (600 g) beef chuck or stew meat, cut into large chunks
10 medium mushrooms, roughly chopped
3 carrots, peeled and cut into chunks
1 onion, finely chopped
1 clove garlic, peeled
3 tbsp olive oil
2 bay leaves
Fresh thyme sprigs (2-3)
Salt, to taste
Pepper, to taste
